Don't just experience Japan – get hands-on.

This year, Berlin Ramen Festival invites you to dive even deeper into Japanese food and everyday culture. On Saturday, October 10, and Sunday, October 11, 2026, our Workshop Area becomes a place to taste, learn, create and discover.

From Furoshiki and Japanese food art to matcha, sake, fermentation and ramen, six different workshops await you – hosted by passionate people ready to share their craft, knowledge and stories with you.

All workshops take place at the same times on Saturday and Sunday. Capacity is limited.

Furoshiki – The Japanese Art of Wrapping

Hosted by Wakiya

One cloth. Endless possibilities.

Discover Furoshiki, the traditional Japanese art of using a square piece of cloth to wrap, carry and completely transform everyday objects. Together with Furoshiki master Keiko Wakita, you'll learn basic folding and knotting techniques and put them into practice yourself.

A simple piece of cloth can become gift wrapping, a bag, decoration or even a fashion accessory – without using any tape.

Our tip: Feel free to bring your own object, such as a bottle, book or small box, and discover how you can wrap it using Furoshiki.

Draw Your Favorite Japanese Food!

Hosted by Hiromi Moriya

Ramen, onigiri or maybe your favorite Japanese dessert? In this workshop, Japanese food becomes art.

Chalk-art designer Hiromi Moriya introduces you to an oil pastel technique refined in Japan, where the colors are blended directly with your fingers. You'll create your artwork on real vintage book pages – either following a reference or bringing your own idea to life.

Hiromi has been working as a chalk-art designer in Japan and Germany for around 20 years, combining her passion for art with Japanese food culture.

No previous experience is required. Hiromi will guide you through the technique step by step, and at the end you'll take your own little piece of art home with you.

Tama Matcha Workshop

Hosted by Tama Matcha

Matcha is much more than a sweet green latte.

In this interactive workshop, you'll discover where matcha comes from, how it is produced and what really matters when it comes to traditional preparation.

With your own bowl, bamboo whisk and matcha from Uji and Kagoshima, you'll prepare your own matcha step by step. You'll learn how water temperature, ratios and the right movement with the chasen affect the result, before preparing a classic usucha yourself.

Afterwards, you'll experience the same matcha again as a matcha latte and compare the two directly.

And of course, tasting is part of the experience: enjoy the matcha you've prepared yourself together with a Japanese sweet.

Sake Discovery: 3 Styles + a Mystery Pour

Hosted by Japan Sake Imports

Never tried sake before? Or do you already know the difference between Junmai and Daiginjo? Either way, you're in the right place.

Daichi Imai from Japan Sake Imports takes you on a relaxed journey into the world of Japanese sake. After a short introduction to how sake is made and what distinguishes the different styles, you'll taste three classic sake styles side by side.

To finish, a fourth and unknown sake awaits you: the Mystery Pour.

Originally from Japan and now based in Berlin, Daichi works as a sake importer. Through tastings in cities across Germany, his goal is to make sake more approachable and share a piece of Japanese drinking culture – without complicated rules or any previous knowledge required.

Kimchi & Fermentation Workshop + Tasting

Hosted by Flavor Focus Lab

This isn't about giving you another kimchi recipe to follow.

Instead, chef and fermentation expert Simon Hannig shows you how to understand fermentation as a system and apply that knowledge to all kinds of solid vegetables afterwards.

What actually happens during lactic acid fermentation? What role does salt play? How do time and temperature influence the result? And how can you tell whether a fermentation is developing properly?

Simon has been cooking professionally for 15 years and has been deeply involved with fermentation for more than a decade. In this workshop, he combines that knowledge with practical principles that you can apply at home afterwards.

And of course, understanding fermentation also means tasting it: tasting included.

Serious Homemade Ramen Workshop

Hosted by Roman Burkart / romanramen

Ramen can easily seem like a dish of endless ingredients, specialized equipment and three days of preparation. Roman Burkart shows you how to approach a bowl differently – as a system of individual components.

Noodles. Tare. Dashi. Broth. Aroma Oil. Toppings.

In this demonstration-led workshop, Roman breaks down a bowl step by step and demonstrates the techniques, habits and shortcuts that make the biggest difference when cooking ramen at home.

From cutting negi and preparing ajitama and chashu to using tare, aroma oil and dashi correctly, you'll see the individual components in action. Finally, everything comes together again as Roman builds a complete bowl – including tips on arrangement and presentation.

Roman's approach is deliberately aimed at home cooks: he has spent years diving deep into ramen, cooked countless bowls himself and tasted around 50 different ramen during a four-week trip through Tokyo. What started as private ramen dinners eventually developed into pop-ups and the romanramen project.

The most important idea to take away from the workshop:

Stop asking, “Which ingredient is missing?” and start asking, “Which function is missing?”

Depending on the format, each workshop is limited to just 15 to 30 participants, so we recommend securing your spot early.
